Sonoma Valley White Wine
70% Pagani Ranch old vine Tocai Friulano
30% Tanya’s Vineyard Ribolla Gialla
The grapes were put through 24 hours skin contact and then gently pressed. Fermentation took place in 500 liter pungeons with weekly batonage. The remaining percentage of the blend consists of Ribolla Gialla from Tanya’s Vineyard in Russian River. These grapes underwent a 12-hour cold maceration before pressing. Fermentation and elevage took place in neutral barrels with batonage performed once a month.
